About Glenda’s Farmhouse
Glenda’s Farmhouse is an Andersen & Sons Shelling brand. As a vertically integrated farming operation, we raise, hull, dry, shell, sort, store, package, and sell healthy-for-you walnuts. Our walnuts are certified organic by California Certified Organic Farmers (CCOF) and non-GMO project verified, gluten-free, kosher, and certified vegan.
Since 1904, the Andersen family has been farming walnuts, prunes, and cattle in Vina, California, in California’s Central Valley. We have merged with Western Nut Company and are expanding into new brands and other tree nut products, such as cashews, almonds, and pecans. We think of our walnuts as the “go-to” nut of choice for consumer cooking, baking, and snacking.
Add the walnuts, mushrooms, tamari, and salt/pepper to the bowl of a food processor. Pulse a few times in batches until it breaks down and resembles a ground beef texture. Do not over-process, or it will turn smooth like paste.
Store leftovers in the refrigerator for up to 3 or 4 days.
Wash the mushrooms before using them, but be sure to dry them off to avoid adding too much moisture to the mixture.
For Mexican flavor:
Make the “meat” with 2 tablespoons cumin, 1 teaspoon garlic powder, and 1/2 teaspoon chipotle powder (or cayenne).
For Italian flavor:Make the “meat” with 2 teaspoons Italian seasoning, 1 teaspoon garlic powder, and 1 teaspoon onion powder.
For Indian flavor:
Make the “meat” with 2 teaspoons coriander, 1 teaspoon paprika, 1 teaspoon cumin (or garam masala), 1/2 teaspoon cayenne, and 1 teaspoon garlic powder (or onion powder).
