Instructions

  1. Add the walnuts, mushrooms, tamari, and salt/pepper to the bowl of a food processor. Pulse a few times in batches until it breaks down and resembles a ground beef texture. Do not over-process, or it will turn smooth like paste.

    Store leftovers in the refrigerator for up to 3 or 4 days.

Notes:

  1. Wash the mushrooms before using them, but be sure to dry them off to avoid adding too much moisture to the mixture.

Flavor Ideas:

  1. For Mexican flavor:

    Make the “meat” with 2 tablespoons cumin, 1 teaspoon garlic powder, and 1/2 teaspoon chipotle powder (or cayenne).

  2. For Italian flavor:
    Make the “meat” with 2 teaspoons Italian seasoning, 1 teaspoon garlic powder, and 1 teaspoon onion powder.
  3. For Indian flavor:

    Make the “meat” with 2 teaspoons coriander, 1 teaspoon paprika, 1 teaspoon cumin (or garam masala), 1/2 teaspoon cayenne, and 1 teaspoon garlic powder (or onion powder).
