Taco Filling

  • 1 ½ cups raw walnut
  • 2 TBSP olive oil
  • ½ diced medium onion
  • 1 ½ TBSP low-sodium soy sauce
  • 1 TBSP chili powder
  • 2 tsp ground cumin
  • ¼ tsp dried oregano
  • ¼ tsp garlic powder


  • 8 hard or soft taco shells
  • 2 cups shredded lettuce
  • 1 cup chopped tomatoes
  • ½ cup shredded fiesta blend cheese
  • ½ cup mild salsa
  • ½ cup sour cream


  1. Combine mock meat filling ingredients in a food processor.
  2. Pulse until evenly ground, with the texture of ground meat.
  3. Heat olive oil on low-medium heat.
  4. Saute onions until transparent.
  5. Add walnuts, soy sauce, chili powder, cumin, salt, oregano, and garlic powder.
  6. Stir to coat walnuts thoroughly.
  7. Cook for around 3 minutes.
  8. Fix tacos according to personal preferences.
