    1. Preheat the oven to 350°F.
    2. Prepare a loaf pan.
    3. Combine the first six ingredients. Whisk.
    4. Add walnuts and toss.
    5. In a separate bowl, combine the oil, brown sugar, sugar, vanilla, lemon zest, and egg. Whisk.
    6. Stir in the zucchini.
    7. Fold the wet ingredients into the dry ingredients just until combined.
    8. Spread batter into the loaf pan.
    9. Bake for 50 minutes. (Check for a clean inserted toothpick.)
    10. Cool on a wire rack.
