    1. Soak the Glenda’s Farmhouse walnuts for 20 min, drain, and set to the side.
    2. Use a nonstick pan on medium heat to heat the onions and garlic with a couple of tablespoons of water, about 3 minutes until the garlic is fragrant and the onions are clear. (You may need additional water to prevent scorching, or you can use olive oil instead of water.)
    3. Use a food processor to pulse the walnuts and mushrooms to a crumbled texture (similar to ground meat).
    4. Add the walnut and mushroom crumble to the pan.
    5. Add the cumin, chili powder, tomato paste, tamari, oregano, liquid smoke, and ¼ cup of water.
    6. Mix well.
    7. Cook for 8 minutes. (The mixture will start to brown, and the mushrooms will be soft.)
    8. Season to taste with salt, pepper, cilantro, and lime juice.
    9. Fix up the tacos according to preference!

  • Warm your tortillas! Warm a few seconds, flip to the other side, and warm it as well. This step takes a few seconds, but it makes a huge difference! Use a nonstick pan and a spatula if you’re not brave enough to use the stove and your hand.
  • No tamari? Substitute soy sauce, but the result won’t be gluten-free (unless you buy specifically gluten-free soy sauce).
