Healthy cookies are an oxymoron that few will believe, but when you incorporate walnuts into the batter, you bring protein, Omega-3s, and other nutrients into a delicious snack. Glenda’s Farmhouse grows, shells, packages, and sells our wholesome walnuts for families to create quality food.

Ingredients

Instructions

    1. Preheat the oven to 350°.
    2. Sift the flours, baking powder, and salt into a bowl.
    3. Mix in the walnuts.
    4. Mash the tofu in a separate bowl.
    5. Combine the mashed tofu with the olive oil, brown sugar, maple syrup, and vanilla extract.
    6. Fold the wet ingredients with the dry ingredients.
    7. Using ungreased cookie sheets, drop rounded teaspoons of batter.
    8. Bake for 10-12 minutes.

    Chocolate Chip Walnut Cookies

    Total Time: 27 minutes

    Serves: 36

    Ingredients:

    • 1 ½ cups toasted and chopped walnuts
    • 1 cup (2 sticks) soft, unsalted butter
    • ½ cup sugar
    • 1 ½ cup packed light brown sugar
    • 2 eggs
    • 1 TBSP vanilla extract
    • 3 cups all-purpose flour
    • 1 tsp baking soda
    • ¼ tsp ground cinnamon
    • ½ tsp salt
    • 2 ½ cups semi-sweet chocolate chips

    Instructions:

    1. Preheat the oven to 350°.
    2. Line two cookie sheets with parchment paper.
    3. Place walnuts on the cookie sheets.
    4. Bake for 8 minutes.
    5. Take them out of the oven and set aside for future use.
    6. Place butter, granulated sugar, and brown sugar in mixer and mix until smooth.
    7. Add eggs and beat well.
    8. Stir in vanilla extract.
    9. In a medium bowl, combine flour, baking soda, cinnamon, and salt.
    10.  
    11. Add dry ingredients to the wet ingredients a little bit at a time.
    12. Beat until well combined.
    13. Stir the chocolate chips and walnuts into the batter.
    14. Make 1” balls from the dough and put onto a greased and floured cookie sheet.
    15. Press with a fork to flatten just a bit.
    16. Bake for 11 minutes.
    17. Cool on pan for 2 minutes and then on wire racks.
