Cilantro Walnut Sauce

    1. Process all ingredients in a food processor to a smooth texture.

    1. Season the chicken with onion powder and salt.
    2. Melt half of the butter in an instant pot set to sauté.
    3. Lightly brown half of the chicken, remove, and set aside.
    4. Repeat the process of melting butter and browning chicken.
    5. Put all chicken in the instant pot, add the broth, and close the instant pot.
    6. Set instant pot on normal for 12 minutes.
    7. Upon the end of cooking time, allow it to stand for a minimum of 10 minutes before releasing the pressure from the instant pot.
    8. Take off the cover of the instant pot and turn back to sauté. Cook on this setting, reducing half of the liquid.
    9. Remove the chicken from the pot and add in the prepared sauce. Stir well.

Plating and Service

    1. Plate with chicken covered with ¼ of the sauce.
    2. Garnish with walnuts, cilantro leaves, and pico de gallo.
    3. Serve immediately.
