    1. Preheat the oven to 300°.
    2. Prepare a baking sheet by lining with parchment paper.
    3. Mix the cinnamon, granulated sugar, and light brown sugar in a bowl.
    4. In a separate bowl, whisk the egg whites until frothy.
    5. Add the water and whisk for another minute.
    6. Add the nuts to the egg whites and evenly coat the nuts with the egg whites.
    7. Add the bowl of mixed sugars and cinnamon. Toss to coat.
    8. Spread the nuts in an even, single layer on the prepared baking sheet.
    9. Bake for about 30 minutes, stirring after 15 minutes.
    10. Remove from the oven and cool on a wire rack.


Suggestions for Success:

  • If the cashews are sticky, they haven’t cooked long enough.
  • Use raw cashews, not roasted ones.
