- Preheat the oven to 300°.
- Prepare a baking sheet by lining with parchment paper.
- Mix the cinnamon, granulated sugar, and light brown sugar in a bowl.
- In a separate bowl, whisk the egg whites until frothy.
- Add the water and whisk for another minute.
- Add the nuts to the egg whites and evenly coat the nuts with the egg whites.
- Add the bowl of mixed sugars and cinnamon. Toss to coat.
- Spread the nuts in an even, single layer on the prepared baking sheet.
- Bake for about 30 minutes, stirring after 15 minutes.
- Remove from the oven and cool on a wire rack.
Note
Suggestions for Success:
- If the cashews are sticky, they haven’t cooked long enough.
- Use raw cashews, not roasted ones.
Flavor Variations
The seasonings you use can be swapped out; consider any of your favorites. (Think ranch, smoked paprika, chili lime, etc.)
You may add a tsp or two of soy sauce to the egg whites.
Swap out the egg whites for light oil or the juice from a can of chickpeas in case of allergy or dietary preference.
