Preheat your oven to 325°F while you grease and flour a 9 X 5-inch loaf pan.
In a medium bowl, whisk together flour, baking soda, cinnamon and salt.
In a large bowl, whisk together oil, maple syrup, yogurt, vanilla and eggs. Fold in the flour mixture and then the mashed bananas and walnuts, reserving a small handful of walnuts to sprinkle on top of the batter.
Spread batter into prepared loaf pan and sprinkle remaining walnuts on top.
Bake for 60 to 70 minutes or until a toothpick comes out with just a few moist crumbs. Let cool completely on a wire rack before carefully removing from pan and slicing.
