Candied Walnuts Recipe
Description
Glenda’s Farmhouse is an Andersen & Sons Shelling brand named Glenda for the Andersen brothers’ mother. Since 1904, the Andersen family has been farming walnuts, prunes, and cattle in Vina, California. We have merged with Western Nut Company and are expanding into new brands and other tree nut commodities, such as cashews, almonds, and pecans. Our walnuts are locally grown and certified organic by California Certified Organic Farmers (CCOF).
Why Cook with Walnuts
According to the USDA, walnuts are an excellent source of vitamin C, B vitamins (vitamin B6, riboflavin, niacin, thiamin, pantothenic acid, and folate), vitamin E, and minerals such as calcium, iron, magnesium, potassium, sodium, and zinc.
They are 65 percent fat by weight and 15 percent protein and are richer than most nuts in polyunsaturated fats (the “good” fats). Walnuts have a relatively high amount of omega-3 fatty acid called alpha-linolenic acid (ALA). They are also rich in an omega-6 fatty acid called linoleic acid. These, and other beneficial nutrients, cause many people to think of walnuts as “power food.”
Recipe for Sweet & Spicy Candied Walnuts
These perfectly sweet, subtly spiced, and delightfully crunchy candied walnuts were inspired by a California Walnut Board recipe and take only minutes to make. Use them as a topping for oatmeal, rice pudding, pancakes, spinach salad, sweet potatoes, and anything else you can think of.
They also make delicious gifts for Christmas and other holidays. Double the recipe and divide them into pretty glass jars with a ribbon and a little gift tag.
Ingredients
Instructions
-
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
Combine sugar, salt, and spices in a small bowl. Place nuts in a separate bowl. Add olive oil and maple syrup to the nuts and mix to coat. Add the dry ingredient mixture to the nut mixture in small increments, tossing well to coat the nuts after each addition.
Spread the nuts evenly over the parchment and bake for 12-15 minutes, or until golden brown and fragrant, tossing/stirring once at the halfway point to ensure even cooking.
Enjoy them warm or let them cool and dry completely on the pan (they’ll crisp up as they cool). Store these candied walnuts in an airtight container at room temperature for up to 2 weeks (or in the freezer for one month).
Optional: Use a combination of 1 cup pecans and 1 cup walnuts.
