Instructions

- Toss the shrimp with the cornstarch. Set to the side.
- Mix the sauce’s cornstarch and a bit of the stock to dissolve the starch.
- Add the remaining ingredients for the sauce - the rest of the stock, hoisin sauce, honey, soy sauce, vinegar, garlic, and ginger. Mix.
- Using a large skillet, heat the oil on medium heat.
- Cook the shrimp in a single layer - one minute on each side.
- Add the sauce to the pan. Stir for about one minute until the sauce reaches a thicker consistency.
- Stir in the cilantro and top with sesame seeds and minced cilantro.
*Prepare raw cashews by toasting them in a 350° oven for about 8 minutes until they’re fragrant and golden.

- Buy ocean-friendly certified shrimp, medium-sized, with the tails on or off.
- Tails can be left on, but enjoying the meal is easier with the tails removed.

- Store leftovers in the refrigerator for a maximum of two days, and reheat slightly so the shrimp don’t overcook.
