- Mix together the soy sauce, hoisin sauce, rice vinegar, honey, teaspoon of sesame oil, ginger, and garlic; set aside for later.
- In a different bowl, use the salt, pepper, and cornstarch to prepare the chicken.
- Prepare a large skillet on medium-high heat and then add the tablespoon of sesame oil.
- Cook the chicken until it just starts to brown (about five minutes).
- Set the chicken to the side (remove into another receptacle out of the oil).
- Replace the chicken in the skillet with the broccoli and bell peppers; cook for about 3 minutes.
- Return the chicken to the skillet. Add the sauce and the cashews.
- Mix and let the sauce thicken.
- Serve over brown rice.
Note
Helpful Notes and Variations:
- Cornstarch can help thicken sauce. Mix a bit of cornstarch and water and incorporate into the sauce.
- Add additional vegetables like mushrooms, sugar snap peas, carrots, onions, or green and yellow bell peppers.
- Add chili flakes or cayenne pepper to chicken seasoning.
- Fry the brown rice.
- Wait to add the cashews until you plan to eat the meal if you’re likely to have leftovers or are meal prepping for the week.
- Use rotisserie chicken if in a super rush!
