Ingredients:
Taco Filling
- 1 ½ cups raw walnut
- 2 TBSP olive oil
- ½ diced medium onion
- 1 ½ TBSP low-sodium soy sauce
- 1 TBSP chili powder
- 2 tsp ground cumin
- ¼ tsp dried oregano
- ¼ tsp garlic powder
Tacos
- 8 hard or soft taco shells
- 2 cups shredded lettuce
- 1 cup chopped tomatoes
- ½ cup shredded fiesta blend cheese
- ½ cup mild salsa
- ½ cup sour cream
Instructions:
- Combine mock meat filling ingredients in a food processor.
- Pulse until evenly ground, with the texture of ground meat.
- Heat olive oil on low-medium heat.
- Saute onions until transparent.
- Add walnuts, soy sauce, chili powder, cumin, salt, oregano, and garlic powder.
