Healthy cookies are an oxymoron that few will believe, but when you incorporate walnuts into the batter, you bring protein, Omega-3s, and other nutrients into a delicious snack. Glenda’s Farmhouse grows, shells, packages, and sells our wholesome walnuts for families to create quality food.

- Preheat the oven to 350°.
- Sift the flours, baking powder, and salt into a bowl.
- Mix in the walnuts.
- Mash the tofu in a separate bowl.
- Combine the mashed tofu with the olive oil, brown sugar, maple syrup, and vanilla extract.
- Fold the wet ingredients with the dry ingredients.
- Using ungreased cookie sheets, drop rounded teaspoons of batter.
- Bake for 10-12 minutes.

Chocolate Chip Walnut Cookies
Total Time: 27 minutes
Serves: 36
Ingredients:
- 1 ½ cups toasted and chopped walnuts
- 1 cup (2 sticks) soft, unsalted butter
- ½ cup sugar
- 1 ½ cup packed light brown sugar
- 2 eggs
- 1 TBSP vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking soda
- ¼ tsp ground cinnamon
- ½ tsp salt
- 2 ½ cups semi-sweet chocolate chips
Instructions:
- Preheat the oven to 350°.
- Line two cookie sheets with parchment paper.
- Place walnuts on the cookie sheets.
- Bake for 8 minutes.
- Take them out of the oven and set aside for future use.
- Place butter, granulated sugar, and brown sugar in mixer and mix until smooth.
- Add eggs and beat well.
- Stir in vanilla extract.
- In a medium bowl, combine flour, baking soda, cinnamon, and salt.
- Add dry ingredients to the wet ingredients a little bit at a time.
- Beat until well combined.
- Stir the chocolate chips and walnuts into the batter.
- Make 1” balls from the dough and put onto a greased and floured cookie sheet.
- Press with a fork to flatten just a bit.
- Bake for 11 minutes.
- Cool on pan for 2 minutes and then on wire racks.
